Easy Store Mode, on and off in one click
The simplified admin is a mode, not a life sentence. Pick which roles get it by default (Shop manager, out of the box) and everyone can flip it for themselves from a switch in the admin bar or from their user profile. An administrator who wants the calm store view gets it in one click, and gets the full WordPress back the same way.

About user switching
Site administrators can switch to any user they are allowed to edit, the usual WordPress rule. Anybody else, a shop manager in practice, needs an administrator to turn on the delegation setting first. Even then they can only reach accounts whose roles are all on the switchable list and that hold no administrative capability, so an administrator account is never reachable that way. If you already use the User Switching plugin, this feature steps aside and lets it do the work.
A note on what this plugin is
Hiding menus is about comfort and focus, not about security. What each person is allowed to do is still decided by their WordPress capabilities, exactly as before installing this plugin.

Not unless you want it to. By default only the Shop manager role gets Easy Store Mode. Any administrator can turn it on for themselves from the admin bar switch, and turn it off again the same way.
The Easy Store Mode switch stays in the admin bar the whole time, in both the dashboard and the front end. Click it and you are back to the full WordPress admin. Your own profile also has the setting.
Yes. The settings page lets you turn each piece on or off, and it lists the top-level menus and the dashboard widgets your site has so you can tick the ones you want to keep. Anything the list cannot show can still be typed by hand: the slug works, and so does the address of the screen. That includes screens that hang off another menu, such as options-general.php?page=whatever, and in that case the menu they hang off comes back carrying only what you asked for.
Because a store needs it. It is what makes the User Switching plugin usable, so you can look at the store through a customer account, and it is where Terms & Conditions Consent Log puts its Consent log screen. Keeping the menu grants nothing: each person still sees and does only what their own role allows. You can hide it from the settings if you would rather not have it.
No, and it is worth being clear about it. This plugin changes what people see, not what they are allowed to do. Permissions are still WordPress capabilities. If you need real restrictions, use a role editor.

Without that setting, switching is limited to site administrators. It is a deliberate, opt-in decision, and it can be taken back at any time.

Yes. The plugin preserves WooCommerce related menus and dashboard widgets from extensions, and third party plugins can declare their own dashboard widgets as store related with the ayudawp_esm_is_woocommerce_widget filter.
